Potato Masala

Dear foodies,

How is everyone doing? Well it is a rainy and lazy day in Colombo today. I wanted to sleep till late but my angel got up early and didn't let me sleep. I am simply loving the weather its really cool and cuddly :):). I let mum do the cooking today cos I am enjoying the weather and doing absolutely nothing..

I dint get the time to blog at all towards the end of August. One of my cousin met with an accident on her way back to Oor and lost her 2 years old son :( :(. I had to run to Oor and now she is admitted in the hospital so been extremely busy.

I never got the time to go to the kitchen but forced myself to make something for updating the blog. I made gram flour roti, chicken masala and potato masala for dinner yesterday. It was really appreciated by Dear hubby and bro Sam. I will update the recipes of gram flour roti and chicken masala later. Lets get started with potato masala.



Ingredients 

Boiled potatoes (cubed)                - 500g
Melted Ghee                                 - 6 tbsp
Gram flour                                    - 1 1/2 tbsp
Wheat flour                                   - 1 tbsp
Chili powder                                 - 3 tsp
Salt                                                - 1 tsp
Bay leaves                                     - 2
Onion                                            - 1
Garlic                                            - 3 pods
Water                                             - 1/2 cup
Cloves                                           - 2
Cardamom                                    - 2
Coriander powder                         - 1 tsp
Cumin powder                              - 1/2 tsp
Tomato                                          - 150g (juiced)
Turmeric powder                          - 1 tsp
Sugar                                            - 1 tsp
Green chilies                                - 5 sliced
Coriander leaves                          - for garnish 

Make a paste of onion + garlic + green chilies 

Method 

Mix gram flour, wheat flour, 1 tsp chili pwd, 1/2 tsp salt in a bowl.
Dust potatoes with the flour mixture
Deep fry the dusted potatoes until crispy 

Heat a pan with ghee
Add onion paste and stir for 5 minutes 
Add cumin, coriander and 2 tsp of chili powder
Cook for few minutes 
Add bay leaves, cardamom, cloves and 1/2 tsp of salt
After few minutes add tomato juice and turmeric powder
Add 1/2 cup water and bring it to boil
Add sugar and fried potatoes 
Cook for a while
Add 1 tbsp of flour mix used to dust the potatoes
Mix it well to coat the fried potatoes
Sprinkle with coriander leaves
Add green chilies and remove from heat

Serve hot with roti

Adukku Roti

Hello Foodies,

How are you all doing today? I am not doing well at all. I am having a bad cold and runny nose :S argggghhhh... :):). 

Anyways, today I am going to share a recipe at the request of Ms. Yushra... Adukku Roti..

Adukku Roti


Ingredients for the pancake

All purpose flour                        - 500g
Eggs                                              - 2
Salt                                               - 1 tsp
Milk                                              - Required to make a thick batter 




Method

Add all the ingredients and make a thick batter like the one shown above. Make pan cakes using a non stick pan.




Ingredients for the Filling

Chicken/beef keema                    - 500g
Boiled potatoes                             - 200g
Onion                                              - 300g (chopped)
Green chilies                                 - 3 (chopped)
Ginger and Garlic paste  (gng)  - 1 tbsp
Cumin pwd                                    - 1 tsp
Pepper pwd                                    - 1 tsp
Oil                                                  - 2 tbsp
Salt                                                 - 1 tsp
Tomato                                           - 1 (chopped)

Method 

Add oil in a heated pan
Add gng paste and keema
Mix it well and add salt
Cook for a while
Add pepper and cumin pwd
Cook for a while
Add chopped green chilies followed by onion
Adjust salt as per the taste
Add boiled potatoes
Cook for 5 minutes
Remove from fire


Now place a pancake in a plate followed by the filling. Then cover it with another pancake. Do this five times.




This is how it will look. Finally cover it with a dough. The ingredients to make the dough are as follow:

Ingredients for the dough

All purpose Flour                 - 150g
Butter                                     - 50g
Warm milk                            - 1/2 cup
Egg yolk                                 - 1 for brushing

Method

Make a dough using the above ingredients and roll it to cover the adukku roti. 
After covering egg brush the top
Preheat over in 200c for 10 minutes
Bake it for 30 min in 200c

Note: You can use a pancake to cover as well which I always do as I don't prepare the traditional way of making it. I used the pancake to cover and this is how it looks

Spicy Fried Chicken

Hello Foodies,

How is your day today??? How is your EID shopping going?? Well I managed to finish it yesterday :P:). Today, I want to share a different spicy chicken recipe.

Spicy Fried Chicken

If you are in a hurry.. this is not the dish to make... Well I say this because you need a lot of time to make this dish as there are 3 main steps of preparing it. :). Let me just start

Ingredients for Marinate

Chicken                                        - 750g (cut into small pieces)
Lime juice                                    - 2 tbsp
Ginger and Garlic paste            - 2 tbsp
Coriander pwd                            - 1 1/2 tsp
Cumin pwd                                  - 1/2 tsp
Garam masala                             - 1/2 tsp
Salt                                                - 1 1/2 tsp
Chili pwd                                      - 1 1/2 tsp
Tandoori pwd                              - 1 tsp

Method 

Marinate chicken for about 15 minutes adding all the ingredients given above. 
After 15 minutes, add 1 1/4 cups of water to the chicken and cook in medium heat until the gravy is evaporated.
Remove from heat
Transfer to another bowl



Ingredients for Chicken Coating

Gram flour                                - 2 tbsp
All purpose flour                     - 2 tbsp

Method

Combine both the flours and add it to the cooked chicken
Mix it well 
Deep fry the coated chicken until crispe


Ingredients for Chicken Gravy 

Ghee                                       - 4 tbsp
Garlic                                     - 3 cloves
Ginger                                    - 1 inch
Green chilies                         - 4
Turmeric pwd                       - 1 tsp
Chili pwd                               - 1 tsp
Lime juice                             - 1 tbsp
Garam masala                      - 1 tsp
Beaten curd                          - 1 1/2 cup
Gram flour                           - 1 tbsp
Tandoori pwd                      - 1 tsp

For garnishing 

Onion                                     - 1 (cut into rings)
Coriander leaves                  - 3 tbsp


Method

Make a paste of garlic, ginger and green chilies - green paste
Add ghee to a large pan on heat
After the ghee is melted add the green paste
Add turmeric and chili pwd.
Mix it well
Add curd and cook for a while
Add garam masala, tandoori pwd and salt
Stir well and cook for few minutes
Add the fried chicken and mix it well
Cook uncovered for about 10 minutes
Sprinkle with gram flour
Add lime juice and remove from heat
Garnish with onion and coriander leaves

We are done with making Spicy Fried Chicken :):). Try it out yourself and let me know how it turns out.

Chicken Curry Pizza

Hello Foodies,

Today's special recipe is going to be Chicken Curry Pizza :):). Yea finally I managed to get the pictures from my camera :).


Ingredients 

Ingredients for Pizza Crust

This is how the dough looks like 

Dough
All purpose flour                          - 320g
Salt                                                  - 1 tsp
Warm water                                  - 1 cup
Baking powder                             - 1 tbsp
Unsalted butter                            - 4 tbsp
Yeast                                               - 2 1/4 tsp

Method

Dissolve yeast in warm water and set aside for 10-15 minutes
Mix flour, salt, baking pwd in a large bowl
Add butter and followed by the yeast mix
Knead the dough and keep it covered in a warm place for 1 hour


Ingredients for Pizza Sauce 

This is how the sauce looks like 

Pizza Sauce

Olive Oil                                   - 2 tbsp
Butter                                       - 1 tbsp
Onion                                       - 1/2 cup (well chopped)
Garlic paste                             - 1 tsp
Tomato sauce                          - 1 small can or 1 cup
Tomato paste                          - 2 large tomatoes blend well or 1 can
Cheese                                      - 2 tbsp (grated)
Salt                                            - 1/2 tsp
Sugar                                        - 1/2 tsp
Pepper                                      - 1/2 tsp


Method

Melt butter in a pan
Add onion and fry til transculent 
Add garlic paste and stir
Add tomato sauce and tomato paste
Add cheese, salt, sugar and pepper pwd
Bring to simmer in low flame for about 15 minutes


 Ingredients for Pizza Topping

Pizza Toppings

 Boiled Chicken                               - 250g
 Ginger and garlic paste                - 1 tbsp
 Capsicum  green and red             - 2 each (well chopped) I used only green couldn't find red
 Tomato                                            - 1 small (well chopped)
 Pepper powder                               - 2 tsp (adjust per your taste)
 Chili powder                                   - 1 tsp
 Tandoori powder                           - 1 tsp
 Oil                                                     - 3 tbsp

Mozzarella Cheese grated              - to sprinkle over the topping (around 10 tbsp) but adjust to your taste. If you want it to be more cheesy then add more :):).

Method

Add oil in a pan
Add onion and fry till translucent 
Add ginger and garlic paste and temper for few minutes
Add the boiled chicken and roast for 5 minutes
Add capsicum and tomato cook for 10 minutes
Add chili and tandoori pwd
Stir for a 5 minutes
Remove from flame


Now divide the dough into two portions and roll it
Put it in a tray and fork it well

Dough

Pour the sauce over the flour and add the topping followed by grated mozzarella cheese.

Pizza ready to bake
Now ready to bake :):). Much more clear picture from my camera :):).

Baking Instruction

Pre-heat oven for 10 minutes in 200c

Bake in 200c for 20 minutes (but do insert a knife after 15 minutes and check if it is ready to be taken out of the oven)

Chicken and Pepper Fry with Roti

Hello Foodies,

How are you all doing today? I have been really busy yesterday with some religious activities since it is the last 10 days of Ramadan. I have been keeping myself busy with doing good stuff.. I hope everyone of you who belongs to my religion do perform good deeds in the last 10 days of Ramadan.

I have shared this link with only very close friends and brothers of mine. Razz, Shif, Isthi and Nazz. This is with the intention of helping them to taste home recipes as they are all away from home..

Today I am going to share a recipe which is my own discovery :P :P. I am really bad at naming dishes seriously.. so if any of you can suggest me a better name after trying the dish. Please feel free to do so :):). Would really appreciate it...

Well I named the dish I am posting today as " Chicken and Pepper Fry" well initially I named it "Dry Chicken and Pepper Curry" but felt it doesn't suit cos there is no gravy in this dish so I can't call it a curry :P:P. Obviously :):). Now, without wasting anymore time let me just get into the recipe.
 
So this is how it looks 

Chicken and Pepper Fry

 Ingredients

Chicken                                                           - 200g (well chopped into small pieces)
Tomatoes                                                        - 2 (chopped into small pieces)
Green chilies                                                  - 4 (chopped)
Leaks/Onion                                                  - 200g (chopped into small pieces)
Garlic paste                                                    - 1 tbsp
Ginger paste                                                   - 1 tbsp
Salt                                                                   - 2 tsp
Chili powder                                                   - 1 tsp
Pepper powder                                               - 2 tsp (adjust according to your taste)
Soy sauce                                                         - 1 tbsp
Oil                                                                     - 4 tbsp
Masala powder                                               - 1 tsp


Method

Add oil into a heated pan
Add ginger and garlic paste
Stir for a while
Add tomatoes and cook for 10 minutes until the tomatoes well cooked
Add masala, chili and pepper pwd
Add salt and  mix it well
Cook for 5 minutes
Add chicken  and mix it well
Stir it well to ensure that the mixture gets coated to the chicken
Add soy sauce and cook it for 10 minutes
Cook until all the water from the chicken evaporates 
Add green chilies and cook it for 5 minutes
At last add leaks/onions and mix it well
Cook for 5-10 minutes depending on how much you want the leaks/onion to be cooked
Remove from the fire


It can be served with rice, bread, roti or naan.

I used onions instead of leaks because of my non-preference to the taste and smell of leaks. You can use leaks if you like them. 

It tastes best with roti.. I am sorry I couldn't get a picture of the roti I made :):). Hence, I will share only the recipe here. :):)

It is an easy roti.. which can be made within an hour :P:P

Ingredients 
 
All purpose flour                                 - 500g
Water                                                    - 1 cup
Butter                                                    - 100g (you can use margarine as well)
Eggs                                                       - 2
Yeast                                                      - 2 tsp
Sugar                                                     - 2 tsp
Salt                                                        - 2 tsp


Method

Mix all the ingredients except egg and water in a large bowl
After mixing it well add egg and water
Make a soft dough
Keep it aside for half an hour until it doubles
After it doubles make it into small balls
On a rolling tray sprinkle flour and roll the roti
Toast both sides well in a hot pan

Turkey Pulao

Hello foodies,

How many of you all are sick of eating the same plain white rice everyday? well my hubby does get sick of it.. he loves variety :):) which makes me search for recipes in the net. I found this recipe and he loved it :):).  

As I mentioned the 2nd recipe I am going share today is  called Turkey Pulao.

I am sure you all will definitely enjoy it as it not only tastes good but looks great :):). 

So this is how it looks

Didn't I tell you that the look of it makes you hungry ;):):). 

So here are what you need to make this delicious dish 

Ingredients 

Bay leave                                               - 1
Ginger and Garlic paste                     - 2 tbsp
Onion                                                     - 1 (chopped)
Cumin pwd                                           - 1 tsp
Cinnamon                                             - 3 small sticks
Pepper pwd                                           - 1 tsp
Coriander pwd                                     - 1 tsp
Paprika pwd                                         - 1 tsp
Beef/Mutton                                        - 500g
Salt                                                         - 3 tsp
Soy sauce                                              - 2 tbsp
Tomato paste                                       - 3/4 cup
Peanuts                                                 - 3 tbsp
Rice                                                        - 750g (soaked and drain for 20 min)
Butter                                                    - 4 tbsp (3/4 of 100g margarine)


Method 

Heat a pan in low flame
Add butter
After butter melts add bay leave and ginger and garlic paste
Stir for a while
Add onion and cinnamon sticks
Stir well for about 5 minutes
Add pepper, coriander and cumin pwd
Add paprika pwd followed by beef/mutton
Stir well and add salt
Add soy sauce and let it cook for 10 minutes until the meat is cooked
Add tomato paste and mix it well
Add peanuts and let it cook for about 10 minutes
Add rice and cook for few minutes in the oil
Stir well
Add the required amount of water for the rice to cook.. (the level you usually keep to cook your rice).


Note: I used beef cos I couldn't get mutton yesterday.

Chicken Chettinad

How was your day today? It has been a good day for me so far :):). I was really really busy yesterday which is why I could not share any recipes. I made chicken pizza and my favorite butter cookies. I simply love homemade butter cookies.

Today as I am happy and kind of free... thought of sharing 2 really yummy recipes. The first one I am going to post is Chicken Chettinad. I love Indian curries  mainly for the numbers of spices used which give different taste.

Chicken Chettinad

This is how my chicken chettinad looks :):)

Here are the ingredients required

Ingredients 

Chicken                                        - 800g
Curry leaves                                - 8
Onion                                           - 2 medium size (chopped)
Tomato                                        - 2 large (chopped)
Red chili pwd                             - 1 tsp
Turmeric pwd                            - 1 tsp
Lime juice                                   - 2 tsp
Oil                                                 - 2 tbsp
Water                                           - 2 cups
Salt                                               - to taste
Chopped Coriander Leaves     - for garnishing

for the paste

Poppy seeds                                          - 2 tsp
Whole Red chillies                              - 6
Grated Coconut                                   - 6 tbsp
Coriander pwd                                     - 1 tsp
Cumin pwd                                           - 1 tsp
Fennel seed                                           - 1 tsp
Cinnamon stick                                    - 2 cm
Cloves                                                     - 2
Cardamoms                                           - 2
Ginger and garlic paste (GNG)          - 4 tsp


Method
Roast all the ingredients for the paste except for ginger and garlic in 1 tbsp of oil
Allow to cool.
Grind to a paste along with  GNG paste.
Heat the remaining oil in a pan on medium level till hot
Fry the chopped onions till they are golden brown
Add curry leaves, ground paste, turmeric and red chilli pwd
Fry for 5 minutes
Add chopped tomatoes and fry for about 2 minutes or till the oil leaves the sides of the pan
Add chicken and mix well
Cook on medium heat for about 5 minutes
Add lime juice and water
Sprinkle salt to taste and mix well
Cover and cook on low heat for about 20 minutes or till the chicken is fully cooked
Garnish with finely chopped coriander leaves


I avoided coriander leaves cos my family does not like the smell much.. but coriander adds a really good smell and flavor to the curry. So it is a must unless you have problem with the smell. 

It tastes best with garlic naan
