Cucumber and Peanut Salad

Hello Foodies,

Summer is at its best in Colombo today... It is extremely warm and I just can't fall asleep. I can't switch on the AC cos my angel is having a bad cold and I don't want it to get worse. Therefore, I decided to share a recipe with you all til I fall asleep :):). 

Today I am going to share a recipe of Cucumber and Peanut Salad. The name says it all. I always end up making this salad whenever I have sudden visitors for lunch. You can me this salad within few minutes and it tastes really yummy with fried rice and sesame chicken :P. Give it a try.

Cucumber and Peanut Salad

This is how the salad looks like. Let's get started

Ingredients 

Cucumber                              - 2 medium size cut into rings
Tomato sauce                       - 5 tbsp
Chili sauce                             - 5 tbsp
Chili paste                             - 1 tbsp (optional)
Salt                                         - 1/2 tsp
Sugar                                     - 1/2 tsp
Peanut Powder                    - 5tbsp


Method

Peel, clean and cut the cucumber into rings
Arrange it as you like in a plate
Heat a pan
Add tomato and chili sauce to the pan
Cook in medium heat
Add chili paste (optional), salt and sugar
Mix it well and remove from heat
Pour this mixture on top of the arranged cucumber
Sprinkle with peanut powder

Note: It is not necessary to cook the sauce.  You can just mix everything together and pour it over cucumber but make sure the sugar granules are melted. 

Now that I have given the recipes of sesame chicken, vegetable fried rice and cucumber peanut sauce.. why not try it all together as a complete meal :):)

Vegetable Fried Rice

Hello Foodies,

A very long and tiring day today...  I had so much to do plus trying to introduce solid to my 6 months old.. such a struggle.... 

I made tandoori chicken pizza today and will share the recipe later cos I couldn't get the time to transfer the pictures... thus, I thought I will share the recipe of a vegetable fried rice which is easy and fast to make. So this is how it looks :):)

Vegetable Fried Rice


 Here are list of what you need to make your vegetable fried rice

Ingredients 

Cooked rice                           - 500g
Eggs                                        - 2
Sesame Oil                            -  1 1/2 tsp
Vegetable oil                         - 1 tsp
Grated ginger roots             - 1 tbsp
Minched garlic                     - 2 tsp
Carrots (grated)                   - 1 cup
Green onions (chopped)    - 1/2 cup
Soy sauce                               - 2 tbsp

Method 

Whisk together eggs & 1/2 tsp sesame oil in a small bowl.
Scramble cook the egg  
Heat 1 tsp of sesame oil and vegetable oil in a pan.
Add onion, ginger roots & garlic.
Cook & stir over medium heat until vegetables are tender for about 5 minutes.
Add carrots and cook for about 2 minutes
Stir in cooked rice, green onion, scrambled eggs, soy sauce. 
Cook until the rice is heated 


and your vegetable fried rice is ready to be tasted..

Sesame Chicken

Hello Foodies,

Hope everyone is doing great. The first recipe I am going to post here is Sesame Chicken. This is one of my favorite dish. I am sure you all will definitely like it. :):).  It tastes yummy.. 

Sesame Chicken



Here are the ingredients

Ingredient for frying the chicken

Chicken wings with skin      - 300g
Salt                                           - 1/2 tsp (teaspoon)
All purpose flour                   - 100g
Chili powder                           - 1 tsp
Garam masala                        - 1 tsp
Paprika powder                     - 1/2 tsp
Oil                                            - for frying 


Method

Add salt and marinate the chicken in a large bowl for 10 minutes. 
In another bowl add flour, paprika, chili pwd and garam masala.
Dust the marinated chicken with the flour mixture
Deep fry the chicken in heated oil. 


Ingredient for Sauce

Chili paste                          - 1 full tbsp (table spoon)
White sesame  seeds        - 2 tbsp
Tomato sauce                     - 100ml (adjust it per your taste)
Sugar                                   - 1 tbsp
Water                                  - 4 tbsp
Butter                                  - 2 tbsp
Chili powder                      - 1 tsp

Method

Melt butter in a pan.
Add white sesame seeds and temper for 2 minutes.
Add sugar and stir well
After the sugar melts add water and stir.
Add chili paste, chili pwd, salt and tomato sauce.
Stir well
Add the fried chicken in the sauce.
Stir for 5 minutes
Remove from the fire

Server Hot
